Everytime you're cruising, aside from the bowline, what would u consider as the next useful know in your list? And how do you free your offending sheet?

Aside from the bowline, i think the knot i use the most is the figure of eight knot. I usually use it to stop my sheets from running completely free through the blocks.. That's whenever i use this figure of eight knot, the sheets won't completely run away even if i lose control..
